This weeks menu!

I finally took time to write down my menu! Yay! This is the menu I am following this week. In parenthesis, I’ve added the foods that my non thm’ers eat. I’ve been trying to simplify my mornings by prepping as much of my breakfasts the night before for during the week. I am not an early morning person so the less work in the morning the better! For example, I make a large batch of quinoa and put it into single serve baggies in the freezer. The night before I toss a bag in the fridge to thaw for the next morning. I’ve also been prepping my Trimmy as much as I can the night before. I toss my butter and dry ingredients in the blender so all I have to do in the morning is add my hot coffee & any extracts I want. I have aso simplified my breakfast to 1 or 2 recipes per fuel type per week. Again….the less I have to think the better! I hope this menu helps to simplify your THM journey this week!

· Scrambled egg whites with quinoa & a wedge of laughing cow cheese & Trimmy Light (pg 430). ~ THM E

· Breakfast burrito with cheese & veggies with a Caramel Trimmy Light(pg 430). These can be made in advance too! Make a few up, wrap in a paper towel & plastic wrap & store in the fridge. ~ THM S

· Iced Gaston Protein Coffee for busy mornings. ~THM S

(The kiddos like simple breakfast, so I keep a stock of yogurt, eggs, pancakes, waffles and fruit for them to choose from.)


· Salad topped with grilled chicken, cheese, bacon & ranch dressing. ~ THM S

· Loaded Baked faux-tato with cheese, sour cream, butter etc. ~ THM S

· leftovers from the fridge

(Again, I keep the kids lunches simple. Chicken fries, sandwiches, snacky lunches with lunch meat, cheeses, fruit, crackers and of course….mac & cheese.)


· Cornbread Crusted Mexican Pie pg 132, served with a salad & green beans (and corn) ~ THM S

· Pizza, pg 211 & Salads ~ THM S

· Chicken Parmy, pg 161 & veggies ~ THM S

· Enchilada Wonder Casserole pg 145 ~ THM S

· Hot dogs for softball night…you can’t win them all! I’ll eat two hot dogs with no bun and a lot of fixin’s ~ THM S

THM Menu for 6/22

Alrighty! Here is this weeks menu. I’ll admit, I had a few too many off plan foods this weekend, but today, I’ve stayed on track. I kept this weeks menu simple since we have a lot going on, like construction!!!! FINALLY!!! Our contractor will begin the repairs on our house! I mean it’s only been almost 2 months! (we are 5 days shy of 2 months, not that I’m counting…) I am beyond ready for this to all be done. Just the other morning the Chicks were collecting earthworms….off the kitchen floor….14 of them!!!! No telling what other critters have tried to squeeze in under the plywood that is covering the gaping hole that used to be my french doors. Yuck! But come Friday, we will have new doors there! YAY!!!!

So,Here is what we are eating this week!


B: Breakfast burritos: two whole eggs scrambled with cheese and shredded zucchini in a low carb tortilla and an Iced coffee. (S)

THM Menu 6/15

If you haven’t yet, purchased the Trim Healthy Mama book, I highly recommend to do it ASAP! I’ll be posting menus for the Trim Healthy Mama eating style, but they won’t make any sense if you haven’t read the book first. So without further ado…..

Here is what we are eating this week: (I am only including the THM versions, this will not include the non THM versions that the kids eat. They are growing, they don’t need to watch their fuel types!)


B: 2 slices Ezekiel Toast with one wedge Light swiss Laughing Cow Cheese and some Polaner All fruit with fiber, Fat Stripping Frappa (p.240) coffee version. (E Meal)

L: One low carb tortilla, a wedge of laughing cow cheese, one serving of turkey lunch meat and 100 grams of gala apples. (E Meal)

D: Mega Meatballs with cheesy broccoli and salad. (S Meal)

B: 1 slice Ezekiel Toast with one wedge Light swiss Laughing Cow Cheese and some Polaner All fruit with fiber and an apple (It’s a early run day!) (E Meal)

L: Quesadillas with the leftover meat from last night.

D: Lemon Tilapia over brown rice or quinoa with a salad (E Meal)


Sunday’s you are going to be on your own, as it is kinda an adlib day for me. It’s a toss-up between leftovers from the week or eating out for lunch. Then for dinner we have a bible study group that goes potluck most weeks.


I do keep snacks on hand, but never plan them as I just eat as I feel in the moment and whatever my fuel is for that snack time. My fridge is always stocked with Oikos Triple Zero Yogurt, Cheese sticks, apples, stuff for a Big Boy Smoothie, etc.

Sometimes life takes turns that you are not prepared for. Sometimes they are wonderful turns, sometimes they are trying turns. That happened not long after my last blog post of last summer….the turns. It’s been almost a year since I have written anything!!!  I am hoping this is the end of my impromptu blogging hiatus. I’ve missed writing. (I may not be that great at it, but I’ve missed it nonetheless.)

Here’s what’s been going on….

At the end of last summer, Rooster Brown was offered an amazing job opportunity. It was too good to pass up. We took a few weeks to pray about it and both felt that this was the direction God wanted us to take. Not only was this a career change, but a life change. You see, for the past 10+ years, we have owned our own businesses. That’s all we have known our whole married life. It’s all the Chicks have ever known. But, like I said this opportunity was amazing. So, Rooster Brown, sold the business we had built from the ground up, left the businesses owner world and went corporate. Big Change!!! But, not only that, but he also went back to school. Another big change!!! This has taken some getting used to! But I couldn’t be more proud of him! He has beautifully balanced work, school, and family and I love him for that!

Fast forward 7 months and we have our trying turn…..A huge tree fell on our house during some crazy storms we had in Texas. NOT FUN!!!!  Almost 2 months later and we are still in the repair phase. I tell you what, dealing with insurance companies and mortgage companies are a headache. But, Good news is, I think we are finally on our way to being all fixed up.

During all this craziness, I have taken up running again (it keeps me sane, for real…) and have taken control of my eating habits. It had gotten bad y’all. My cousin told me about an eating style she had been hearing about…Trim Healthy Mama. I looked more into it and decided from that moment, I could do this! This was an eating style I could live with FOREVER! Since then, I have lost 30 lbs and over 25 inches in 6 months!!!! (I’ll post before and after pictures in another post.) It has changed my life. Period. I was recently asked to “coach” some people starting out on THM and to share some of my menus. That’s when I decided to get this blog back up and running again. So….I’m back y’all!!!!! I can’t wait to share all this deliciousness with you!

Wow can God throw you curveballs! Obviously I didn’t do well keeping this blog up. You know that corporate job Rooster Brown went to? So, a year into the job and he got a promotion! Woohoo! Crazy exciting! But…..we would have to move. So, amidst reconstruction, we packed up and moved to Dallas! Small town girl in a big city! 😱😱😱 Culture shock for sure.
Today makes 7 months since we have moved and I can finally say we’ve hit a steady rhythm. Rooster Brown is still going strong in school, Dean’s list baby! (I am so flippin’ proud of him!)
My goal for this blog is to post at least once a week. Fingers crossed. I know I have said it so many times! But I’m seriously this time! I’m trying to find a balance for all the things I love and that are important to me. Pray with me that I can find the sweet spot.

Watermelon Lemonade


I’ve had a watermelon sitting in my kitchen for over a week and hadn’t found the time to chop it up until today. Upon chopping into the highly anticipated fruit of the summer, I was sad to discover that it had become too “mealy” to enjoy. As you know, I’m a “waste not, want not” kind of person. So I tossed this lovely watermelon in the Ninja and now I have delicious watermelon lemonade!

Here’s what you do:
Scoop out the inside of the melon and toss in the blender. I have a ninja pulse, so I just tossed seeds and all in. Blend for about 20-30 seconds. (Not too long as you don’t want to purée the seeds.)
Strain your melon juice with a mesh strainer to get all the pulp & seeds out. (If you don’t, you’ll be chewing your lemonade)

Now you have a bowl of beautiful, red watermelon juice!

To make Watermelon Lemonade:

Combine 2 cups of watermelon juice, 1 cup lemon juice, 3 cups water and 1 cup simple syrup. Stir well and enjoy over ice! Yum!

(For Simple syrup: in a pot combine 1cup water with 1cup sugar. Heat over medium heat until dissolved. I keep a gallon of this in the fridge at all times! It’s so handy!)

Cheers to a refreshing summer drink!

Chicken Pot Pie – Freezer Meal

Here is one of our family favorites! It is so easy to prep, make, and freeze, making this one of my favorite freezer meals. The best part is that my chicks will eat all their veggies with no whining! (Please tell me I’m not alone in the “eat your veggies” battle!)


Here’s the recipe::

2 cans of Cream of Potato Soup
1 can of mixed veggies, drained
2 cups cooked, diced chicken
1/2 cup milk
1/2 tsp Thyme
1/2 tsp Pepper
2 nine inch pie crusts
1 egg beaten

Combine ingredients and spoon into prepared pie crust. Cover with top crust and crimp edges to seal. Slit the top and brush with egg.
Bake at 375 degrees for 40 minutes. Let cool before serving.


Make it a freezer meal:

You can do this a couple ways.
The first way is to get a bunch of aluminum pie pans (9in or cute single servings) and prep a bunch of pies.
The second way, which is my preferred method, is to buy a bunch of refrigerated crusts and store them in the freezer. Then mix up several recipes of the filling and divide into the appropriate number of freezer baggies or containers. When you are ready to make your pie, simply thaw your filling and prep pie as usual.

So simple right! This is a great meal for the busy school year that is around the corner!

Welcome to the coop little chick!

Hi everyone!
As you can tell, I’ve been on hiatus. About a week after my freezer cooking posts, our little chick hatched…6 weeks early! That was quite the surprise! He weighed in at 5lbs 10oz and was 18in long.


After a 3 week stay in the NICU because of some crazy health issues, we headed home and settled in. He is now a healthy 11 weeks and 13lbs!

I cannot imagine life without this little guy! Chicks A&B are loving their new roles as big sisters!
