What you need:
1 1/3 cup wheat flour
3/4 cup rolled oats (not instant)
1/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
3/4 cup milk
1/2 cup coconut oil – melted
1 cup Chocolate Chips (your choice)
What you do:
- 1. Line muffin pan with baking cups. Preheat oven to 400°.
- In a medium bowl first 4 ingredients. Make a well in the center of the flour mixture; set aside.
- In another bowl, combine eggs, milk and oil. Add mixture all at once to the flour mixture. Stir until just moistened.
- Fold in Chocolate chips
- Spoon batter into cups, filling two-thirds full. Bake for 18-20 min or until toothpick comes out clean.
