Freezer Cooking- Quesadillas

Freezer cooking for some can be VERY overwhelming when you start planning the menu, making the monstrous list of ingredients and then there’s the shopping and cooking. For some, taking a day to do that is out of the question. But how about an hour or even less? Today, I made quesadillas for lunch and whipped up extras in the process to freeze. In less than an hour, I made lunch for the family and have enough lunches for about a week. (Not that we will be eating quesadillas every day.)

So, here is what you will need for these super simple quesadillas:

Some shredded cheese, thin sliced chicken breasts, whole wheat tortillas and what ever veggies you want to go inside. My Chicks are picky so it’s just chicken and cheese for us.

Then assemble your quesadillas , cheese, filling and just a smidge more cheese. I use my handy quesadilla press, but you can also bake them in the oven at 300 until all melted.

The finished product is a huge stack of melty, cheesy goodness!

To freeze:
Place in a single layer on a cookie sheet and freeze for 2 hours, then place in freezer bags and store in freezer. Reheat when ready to serve.
