This weeks menu!

I finally took time to write down my menu! Yay! This is the menu I am following this week. In parenthesis, I’ve added the foods that my non thm’ers eat. I’ve been trying to simplify my mornings by prepping as much of my breakfasts the night before for during the week. I am not an early morning person so the less work in the morning the better! For example, I make a large batch of quinoa and put it into single serve baggies in the freezer. The night before I toss a bag in the fridge to thaw for the next morning. I’ve also been prepping my Trimmy as much as I can the night before. I toss my butter and dry ingredients in the blender so all I have to do in the morning is add my hot coffee & any extracts I want. I have aso simplified my breakfast to 1 or 2 recipes per fuel type per week. Again….the less I have to think the better! I hope this menu helps to simplify your THM journey this week!

· Scrambled egg whites with quinoa & a wedge of laughing cow cheese & Trimmy Light (pg 430). ~ THM E

· Breakfast burrito with cheese & veggies with a Caramel Trimmy Light(pg 430). These can be made in advance too! Make a few up, wrap in a paper towel & plastic wrap & store in the fridge. ~ THM S

· Iced Gaston Protein Coffee for busy mornings. ~THM S

(The kiddos like simple breakfast, so I keep a stock of yogurt, eggs, pancakes, waffles and fruit for them to choose from.)


· Salad topped with grilled chicken, cheese, bacon & ranch dressing. ~ THM S

· Loaded Baked faux-tato with cheese, sour cream, butter etc. ~ THM S

· leftovers from the fridge

(Again, I keep the kids lunches simple. Chicken fries, sandwiches, snacky lunches with lunch meat, cheeses, fruit, crackers and of course….mac & cheese.)


· Cornbread Crusted Mexican Pie pg 132, served with a salad & green beans (and corn) ~ THM S

· Pizza, pg 211 & Salads ~ THM S

· Chicken Parmy, pg 161 & veggies ~ THM S

· Enchilada Wonder Casserole pg 145 ~ THM S

· Hot dogs for softball night…you can’t win them all! I’ll eat two hot dogs with no bun and a lot of fixin’s ~ THM S

Welcome to the coop little chick!

Hi everyone!
As you can tell, I’ve been on hiatus. About a week after my freezer cooking posts, our little chick hatched…6 weeks early! That was quite the surprise! He weighed in at 5lbs 10oz and was 18in long.


After a 3 week stay in the NICU because of some crazy health issues, we headed home and settled in. He is now a healthy 11 weeks and 13lbs!

I cannot imagine life without this little guy! Chicks A&B are loving their new roles as big sisters!

Next week I’ll be back to menu planning and healthy frugal living! Thanks for being patient!

Pre-Baby Freezer Cooking – The Menu

So I finally finished the menu and went shopping for my mad freezer cooking session I’m having before the baby hatches. Here’s the plan:

Chicken Spaghetti

Sour Cream Enchiladas

BBQ Chicken Sandwiches

Chicken Strips and Nuggets

Meat Loaf Muffins

Sour Cream Noodle Bake


So there’s the menu and I will post the recipes that go with them as I cook! Hopefully I can get a lot done this evening.


I’m Back….Kinda…

First off I want to apologize for not posting as regularly as I had wanted. On Father’s day, I got to tell Rooster Brown that a new chick would be hatching in February! It was quite an exciting day considering he was in Alaska on a mission trip! I just couldn’t wait any longer to tell him! Thank goodness for facetime! 🙂 Anyway, little did we know the complications that would come along with this pregnancy. Multiple trips to the doctor (1 1/2 away) every week, labs, ultrasounds, the works. I’m happy to say we are on the home stretch at 33 weeks and anxiously awaiting the safe arrival of our new chick.

So with delivery coming quickly and the gift of a new deep freeze (eek!), I am compiling freezer recipes from my own cookbooks along with some submitted by friends. Get ready for a new post coming soon with some amazing freezer recipes!

My posts might still be far between, but I promise, I haven’t forgotten!


Homemade Alfredo Sauce

I found this really simple recipe on Pinterest, and decided I had to try it. Oh my was it delicious!!!! I will never buy jarred sauce again!

    Here’s what you need:

3/4 cup butter (please don’t use the fake, almost plastic stuff. Use real ‘made from cream’ butter!)
12 oz of light/low fat at cream cheese
3 tsp garlic powder
3 cups skim/fat free milk
9 oz reduced fat grated Parmesan
Course black pepper to taste

    Here’s what you do:

Melt butter in sauce pan over medium low heat. Add in cream cheese whisking until melted and smooth. Add in garlic powder and milk. Don’t worry if its runny, the Parmesan will fix that. Once thoroughly mixed, whisk in the Parmesan stirring until smooth. Add pepper to taste and serve over your favorite pasta!!

See how easy that was! This recipe said it served 6, but they must have been serving giants!! I didn’t measure it out for sure, but it could easily serve 8-10.

Quick Lunch for Mom

How many of you moms are currently on the “Mom Diet”? This diet doesn’t involve counting point or calories. This diet involves carrying the laundry basket to the washer, but on the way spying the abandoned PB&J crust on the plate. In a split second battle with yourself, you cave and eat the crust….this becomes your lunch. Sad, I know, but I have done it.

I was recently reading the Bikini Body Mommy and found an amazing recipe for tuna & avocado! It was become my go to lunch.

What You Need
1 large Avocado
1 small can of Tuna
Seasoning of choice (mine is Tony’s)
Wheat thins

Mix it all together and serve with wheat thins.

A simple lunch that is healthy for you! Enjoy!

These pictures are about as embarrassing my Master bedroom pictures!!! Yikes!!! This challenge is keeping me accountable, so I will continue. The after pictures do not show the vacuumed product. My vacuum decided to stop working because the filters need to be changed. Imagine that! Since I had already been to walmart once today and it was too close to dinner to load the Chicks and head to the carwash, so that will have to wait until in the morning.
I feel much better now that the car is all clean! How did you do today?

Here’s the results I promised! The refrigerator didn’t quite get finished. But I did organize and take inventory of the pantry. We have a very deep pantry and it drives me bananas. Things get shoved to the back and forgotten about. Now it is all cleaned out, wiped down and organized! 🙂
