THM Menu 6/15

If you haven’t yet, purchased the Trim Healthy Mama book, I highly recommend to do it ASAP! I’ll be posting menus for the Trim Healthy Mama eating style, but they won’t make any sense if you haven’t read the book first. So without further ado…..

Here is what we are eating this week: (I am only including the THM versions, this will not include the non THM versions that the kids eat. They are growing, they don’t need to watch their fuel types!)

Monday

B: 2 slices Ezekiel Toast with one wedge Light swiss Laughing Cow Cheese and some Polaner All fruit with fiber, Fat Stripping Frappa (p.240) coffee version. (E Meal)

L: One low carb tortilla, a wedge of laughing cow cheese, one serving of turkey lunch meat and 100 grams of gala apples. (E Meal)

D: Mega Meatballs with cheesy broccoli and salad. (S Meal)

Tuesday

B: Fat Stripping Frappa (p.240)- Coffee version (FP meal)

L: Creamy Broccoli Soup (p.335) (S Meal)

D: Quinoa topped with Spaghetti sauce and ground turkey (E Meal)

Wednesday

B: Cheesy Eggs and turkey bacon (S Meal)

L: Grilled cheese on Swiss Bread with cheese crackers (p.395) (S Meal)

D: Pot Luck at church – Sorry, not sure what I’m making yet.

Thursday

B: 2 slices Ezekiel Toast with one wedge Light swiss Laughing Cow Cheese and some Polaner All fruit with fiber, Fat Stripping Frappa (from the book) coffee version. (E Meal)

L: One low carb tortilla, a wedge of laughing cow cheese, one serving of turkey lunch meat and 100 grams of gala apples. (E Meal)

D: Beef Stroganoff over Brown Rice (E Meal)

Friday

B: Breakfast Burrito on a low carb tortilla (S Meal)

L: Cajun Tuna Melt on a Low Carb Tortilla (Basically just tuna, creole seasoning, chopped veggies of choice and some cheese – Laughing cow for a FP or some cheddar for an S)

D: Crock Pot Fiesta Chicken Salads (E, S, or FP depending on how you top it.)

Saturday

B: 1 slice Ezekiel Toast with one wedge Light swiss Laughing Cow Cheese and some Polaner All fruit with fiber and an apple (It’s a early run day!) (E Meal)

L: Quesadillas with the leftover meat from last night.

D: Lemon Tilapia over brown rice or quinoa with a salad (E Meal)

 

Sunday’s you are going to be on your own, as it is kinda an adlib day for me. It’s a toss-up between leftovers from the week or eating out for lunch. Then for dinner we have a bible study group that goes potluck most weeks.

 

I do keep snacks on hand, but never plan them as I just eat as I feel in the moment and whatever my fuel is for that snack time. My fridge is always stocked with Oikos Triple Zero Yogurt, Cheese sticks, apples, stuff for a Big Boy Smoothie, etc.

What’s on the menu?

Oh my, I have really been slacking off the past few weeks! BUT, I do have a menu for this week! Yay! To be honest, I really haven’t stuck to my menu in a few weeks. What with family popping in to visit here and extra family commitments there, there have been a lot of hodge-podge meals. I have got to get myself back on track! Do you ever have those weeks, where all the precise planning goes right out the window? That’s has been my life lately! Oh well…..

I threw away my grocery list before I typed this up. I will do better next week, I promise! 🙂 I know I did spent right at $90 and that was buying 3 gallons of milk (I’m making greek yogurt) and an impulse buy of Cheez-its for the Chicks.

Oh and all the eggs for dying….so make that $95. 🙂 We are dying eggs with kool-aid this time. Have you ever tried it, does it work? I will post how they turn out later!

What’s on the menu?

I am finally getting a chance to type up the menu! The Chicks are happily playing dress up, giving me a few quiet minutes.  I made this week my “NO” week. I have no commitments this week, so that I can focus on getting the house back in order (It’s amazing how quickly it falls apart) and get our schoolwork back on track.

I am really excited about cooking this week! Do you ever go through those slumps, where you don’t want to cook? Me too, just another reason why I LOVE cooking out of my freezer! (I keep telling Rooster Brown that I will soon need bigger freezer!) I’ve got a few new recipes on the menu and some family favorites I dug up. I hope you enjoy them as much as we do!

  • 3 lbs Ground Turkey or ground beef (your choice)

  • 2 cans diced tomatoes (one Italian and one regular)

  • 1 tomato soup
  • 4oz Green Chiles
  • 1 can cream of chicken soup (I will make mine myself)
  • 3 tbls Worcestershire Sauce
  • Regular Yellow Mustard
  • Tortillas
  • Frozen Hashbrowns (not southern style)
  • Lay’s potato chips
  • Popcorn (kernels, not microwave! This is an easy place to make it healthy, coconut oil on the stove with the kernels…delish!)

This should cost you roughly $110. If you make your stock and cream soups, you can cut roughly $10 off the total! Making your own foods, not only is healthy, it cuts down your budget. I was completely sold on the chicken stock, waste not want not right?!?

What’s on the menu?

Wow! What an insane week! We had a lot of plumbing issues, I mean no running potties for 1 1/2 days. For a SAHM with 2 little ones, that is a LONG time! Because of extra expense with the plumbing, I decided to cook out of the freezer. This is when freezer cooking is such a blessing! If you haven’t started freezer meals, now’s the time.

It’s easy to get started, here are a few tips…..

  • If you know your family will not eat an entire recipe, split it into 2 dishes. Eat one and freeze the other. This is the one I do since Rooster Brown is not keen on eating leftovers.
  • Pick one or 2 recipes a week to double. In no time you will have a months worth of meals!
  • Start simple with breads or muffins. I always have muffins in the freezer for quick, out the door breakfasts.

So…now, here’s what we are eating this week!

  • Lemon cake (hey…It’s no worse than a fried donut right??)

I didn’t really have anything to buy at the store this week except fresh fruits and veggies, milk, eggs, etc. I only spent $60 filling in the gaps, leaving us with $40 to help with the plumbing!
